Cookie Rookie: Pistachio Fluff

1 (3.9 ounce) package instant fat-free pistachio pudding mix
2 cups skim milk
1 cup low-fat whipped topping
1 (8-ounce) can crushed pineapple, drained
1 (10-ounce) package mini marshmallows
¼-½ cup sweet coconut, toasted
For Garnish:
sweet coconut, toasted
1. In a medium bowl, combine pudding mix and milk. Whisk 2 minutes.
2. Add pineapple, marshmallows and coconut.
3. Mix well, cover and refrigerate until ready to serve.
4. When ready to serve, spoon fluff into serving dishes and garnish with toasted coconut.
5. Enjoy!
